Bangalay Dining offers an elevated coastal dining experience, seamlessly blending the natural beauty of the Shoalhaven region with a commitment to sustainable and innovative cuisine. Under the guidance of Executive Chef Simon Evans, the menu celebrates native Australian ingredients and locally sourced produce, thoughtfully curated to reflect the rich culinary heritage of the South Coast.

    Start your day with a delightful breakfast, served from 7:30–10:30am on Monday, Friday and Saturday, and from 7:30am–12:00pm on Sunday.

Simon Furley

Originally from Bath, UK, Simon began his career in Michelin-starred kitchens across Europe before spending four years as a private chef on superyachts and luxury estates. After moving to Australia, he rose to Head Chef at Homage in Queensland, where he championed fire cooking and sustainability, earning consecutive Good Food Chef Hats.
