‘Vitello Tonnato’ with green beans, capers, parmesan and crispy kipflers

Salad of paradise pears, Roquefort, caramelised walnuts, bitter leaves and sweet mustard

Roast pork tenderloin with a pulled pork croquette, hand rolled macaroni cheese and grain mustard sauce

Baked fillet of snapper with Thai green curry mussels and a fish and potato samosa

Dessert
Salted caramel tart with ginger ice cream and poached rhubarb

Freshly churned raspberry sorbet and vanilla ice cream with warm madeleines
