Truffle season in Australia is one of the most amazing times in the foodie calendar. Their aroma, mystique and flavours are highly prized and we are lucky enough to have one of the country’s best close by. We will be sourcing our truffles from and joined on the night by Tanya & Patrick from Robertson truffles!
Robertson Truffle Farm is set in the beautiful NSW Southern Highlands. Their Black Perigord Truffle farm has been established for over 15 years and was one of the first operating and producing farms in Australia.
The town of Robertson is noted for its distinctive red volcanic basalt soil, which is known as ‘Robertson soil’. The combination of this soil, our careful preparation of the ground, good rainfall and cool winters with frosts is perfect for truffle growing.
We will be utilising this wonderful ingredient across a 7-course tasting menu weaving it into each dish to show the best of the truffles flavour and aroma.
